Mixed Diced Game is a fantastic versatile base for making anything from a hearty cold picnic pie, a hot Game pie to a delicious warming Game casserole. A typical mix of Diced Game consists of Venison, Pheasant, Pigeon and Mallard.

Mixed Diced Game should be treated like any other red meat used in a casserole. Cooking slowly on a low heat will bring out the full flavour of the Game. The richness of the meat stands up to strong flavours and is complimented well by Autumnal fruits, Red Wine, Port, Rosemary and Thyme.
To Casserole
Preheat oven to 150c
Coat the Mixed Diced Game in well seasoned flour.
In a heavy frying pan sear the meat until it is light brown all over and place on a plate.
Using the juices in the pan fry some onion celery and carrot until soft.
Add the onion and Mixed Diced Game to a casserole dish. Add your stock, some wine and any other vegetables required and cover. Place in the center of the oven for 2 - 2 1/2 hours.
Serve with mashed potatoes and red cabbage - delicious.
